Finding Balance & Peanut butter Truffles

Hey there! I apologize for slacking lately, but I have been so busy. My husband and I found our dream home and have been doing some “house stuff” for the past week. Because we’ve been so busy, we have not had many homemade (or healthy meals) for that matter. So here I am trying to find a balance with work, “house stuff”, exercise, and healthy eating. So far today has been successful on all fronts.

Some things that I have done to help with finding balance is:

1. planning our weekly meals

2. planning my weekly workouts

3. making tons of “to do” lists to help get the house stuff all in order

As long as I stick to it, I should be able to achieve that balance.

Now onto the peanut butter truffles!

Okay, so this recipe came about when I had a ravenous sweet tooth and no sweets in the house (I tend to keep them out of the house specifically for moments like this one). The only two ingredients that I had on hand were: peanut butter and low-fat graham crackers. (Side note: Trader Joe’s Organic Creamy Peanut Butter is always in the house because I couldn’t live without it…if fact, I could eat jars of it at a time).

I put the two ingredients together in the Magic Bullet and viola! Out came the most uniquely textured peanut butter truffle. These things are amazing and they help give you that “sweet tooth fix”.

Here are the ingredients you’ll need to make 8 truffles:

  • 2 low-fat graham crackers
  • 2 tbsp. natural peanut butter

In a food processor (tonight I used a new food processor that I got from Pampered Chef, it worked well, but I still prefer my Magic Bullet) crush the graham crackers. The more finely it is crushed, the “fluffier” your truffle will be.

Next, drizzle the peanut butter into the food processor.

Blend together until it is thoroughly mixed.

Using a teaspoon, place rounded truffles onto a plate. Place in freezer. You can keep them in the freezer for a quick sweet tooth fix. Enjoy!

Nutrition information: Each peanut butter truffle only has 40 calories. Be careful not to eat them all in 1 sitting! Smile
