Hey guys! I apologize for being MIA. I went on an incredible Caribbean cruise with my husband and we had an amazing time. It has taken me awhile to get back into the swing of things (hence being MIA). But I’m back now. Winking smile

Tonight, I made a delicious side dish that I couldn’t wait to share with you!

You will only need these 3 ingredients (for 5 servings):

  • 1 cup of Trader Joe’s Basmati Rice (have I ever mentioned how much I love TJ’s ?) Open-mouthed smile
  • 1/2 cup of Trader Joe’s diced tomatoes
  • 1/2 cup of basil

First, chop the basil.

Drain the tomatoes.

Boil water and cook rice according to package directions.

Once rice is finished cooking, add the basil and tomatoes.

You can also sprinkle with some olive oil, salt, & pepper. Enjoy!
