Birthday, Orecchiette Pasta Dish, & Probiotic Update

Hey guys! I hope everyone had a great weekend and is adjusting to the time change. We had a very important birthday to celebrate this weekend. Roxy, our dog daughter turned 9 years old! Happy Birthday Roxy!

For dinner tonight, I wanted a healthy pasta dish. I love trying new kinds of pasta. Orecchiette is a kind that I had never tried before. It’s pronounced: \ō-ˌrā-kē-ˈe-tā\  They are very cute (and look like little hats). 🙂
This dish was delicious and it made enough for tonight’s dinner and lunches for my husband and I tomorrow.

Here are the ingredients you’ll need (for 5 servings):

2 ½ cups of dried orecchiette pasta (it’s about half of a 1lb. box)
2 tbsp. olive oil
1 ½ tbsp. minced garlic
3 cups of frozen broccoli
5 sun-dried tomatoes
4 oz. of either cannellini beans or Northern beans
Salt and pepper to taste

First, boil the pasta according to the package directions. (This called for 11 minutes).

Rinse the beans.

Microwave the frozen broccoli for about 3 minutes. (Or just enough time to unfreeze it)

In a skillet, sauté olive oil, garlic, and sun-dried tomatoes (slice them first…I forgot to) for 3 minutes.

Add beans, broccoli, salt, and pepper to the skillet for another 3 minutes.

Drain pasta and add to the skillet for a couple of minutes (tossing to coat the pasta).

Drizzle olive oil and top with shredded cheese. Enjoy!

Nutritional information: There are 298 calories, 13 grams of protein, 8 grams of fiber, and 7 grams of fat in 1 serving!

Nutrition tip: Broccoli is a food that has so many nutritional benefits! It is a great source of Vitamin C, potassium, and folic acid. Broccoli also helps our bodies prevent many diseases.

Probiotics update: I’m currently on day 4 of my Renew Life Probiotics. I haven’t notice any major changes just yet as it is only my fourth day on them. Although, I am feeling like I have more energy! I’ll continue updating you. 🙂
