Ravioli and Vegetable Toss

I needed a fast dinner idea for tonight. This meal is not only ready in 15 minutes, but the flavor is incredible! This recipe is modified from Cooking Light’s Annual Cook Book.

Here are the ingredients that you’ll need (for 4 servings):

Frozen cheese ravioli (this particular brand’s serving is 9 pieces, so you’ll need 36 pieces for the total recipe)
½ cup of frozen cut green beans
½ cup of sun-dried tomatoes
½ cup of cherry tomatoes
1 tbsp. minced garlic
1 tbsp. olive oil
1 tbsp. red wine vinegar
Salt and pepper to taste
Parmesan (to sprinkle on top)

Side Note: You could make this recipe even healthier by using whole wheat cheese ravioli (but I was unable to find it when I went grocery shopping).

First, boil water and cook the ravioli according to the package. (This particular kind only needs about 10 minutes).

Chop cherry tomatoes and sun-dried tomatoes (if the sun-dried tomatoes are the kind in oil, squeeze out as much oil into a paper towel before chopping).

 In a large bowl, mix the olive oil, red wine vinegar, cherry tomatoes, sun-dried tomatoes, and garlic.

 Add green beans to the ravioli (about the last 5 minutes of cooking the ravioli).Photobucket


Add the pasta mixture, salt, and pepper to the large bowl. Toss to coat all of the pasta. Photobucket

Sprinkle with salt, pepper, and cheese. Enjoy!

Nutrition Information:  As I mentioned before, this meal could be made even healthier if you substitute the white pasta for wheat pasta.  Each serving has 275 calories and a TON of amazing flavor!
