Strawberry & Candied Pecan Salad

Hey guys! I hope you are having a nice week! Mine is off to a great start with some healthy foods and fun exercise! Tonight’s workout was a Zumba class. If you love to dance and like your workouts to be fun (rather than dreadful), then you must try a Zumba class! So much fun!

Now onto a delicious salad! I love eating salads, but I am not usually very creative with my salads. This recipe was inspired by Outback Steakhouse’s Blue Cheese Pecan Chopped Salad. That salad is delicious, but it is also high in calories (522 calories). My goal was to re-create this salad while cutting down some of the calories.  I must say that I think this might be my new favorite salad!

Here’s what you’ll need:

Salad items pictured here (for 2 servings):

  • 3 cups of mixed greens
  • 1 cup of sliced strawberries
  • ¼ cup of gorgonzola cheese
  • 2 oz. candied pecans

 You will also need this for the dressing:

Dressing items pictured here (for 2 servings):

  • 1 tbsp. sour cream
  • 1 tbsp. olive oil
  • 1 tbsp. white cooking wine
  • 1 tbsp. balsamic vinegar
  • 1 tbsp. honey

First, slice strawberries. Place on top of your mixed greens.

Next place candied pecans and gorgonzola cheese on top of your salad.

Now for the dressing…whisk together sour cream, olive oil, white cooking wine, balsamic vinegar, and honey.

Once nicely blended, pour on top of salad.  Enjoy!

Nutrition information: One serving of this salad has about 410 calories, so this recipe shaved about 112 calories off of the original salad! The combination of the sweet candied pecans and the tart strawberries was A-M-A-Z-I-N-G!

Nutrition tip: Salads are a great way to get the recommended daily 5 servings of fruits/vegetables a day!
