Cucumber & Ranch Mini Sandwiches

Super Bowl parties are around the corner and so are the unwanted calories. I am going to give you some healthy alternatives to enjoy during your Super Bowl celebration.

This recipe is so unbelievably simple to make. They may seem pretty boring, but I promise you these will be a hit. They are very flavorful and healthy! (This appetizer is one that I frequently take to parties).

Here is what you’ll need for 12 sandwiches:

  • 12 slices of whole grain cocktail bread
  • 77 g cream cheese
  • 2 teaspoons of Ranch dip mix
  • ½ cucumber
  •  Peel and slice the cucumber.

    Stir together the cream cheese with the ranch dip mix. 

    Next, spread the cream cheese mixture on each slice of bread.

    Then, place 1 cucumber slice on each slice of bread. Enjoy!

    Nutrition information:  Each cucumber and ranch sandwich contains only 48 calories! Not to mention, the bread contains whole grains and the cucumbers are an excellent source of Vitamin K!

    1. Great recipe, Kristin! I make something similar to this only I use pumpernickel bread, coconut oil and cumin! So tasty!
