Oh man, do I have a great recipe for you! It was inspired by my love for pizza and easy Friday night meals.

When I was a kid, I looked forward to Friday nights because these were usually “pizza nights”. As an adult I still look forward to Fridays, but mostly because it is the start to the weekend. Although Friday nights are not always “pizza nights”, they are usually an easy dinner night or date nights out. This past Friday, I wanted to make an easy dinner that involved pizza, but I also wanted to use up the extra wonton wrappers leftover from the Pumpkin Ravioli with Gorgonzola Sauce I made last week. That is how these Skinny Pizza Pockets came about.

Skinny Pizza Pockets

Servings: 4
Serving Size: 5 pizza rolls

Here are the ingredients you’ll need for 4 servings:

  • 20 wonton wrappers (3 1/2” squares)
  • 1/2 cup pizza sauce
  • 4 oz. fresh mozzarella
  • 1 tbsp. oregano
  • slices of pepperoni (optional)

Preheat oven to 350 degrees. Line a cookie sheet with aluminum foil and spray with non-stick cooking spray.

Lay the wonton wrappers on a flat surface. Evenly spoon pizza sauce onto each wonton wrapper. Top each with oregano, mozzarella, and pepperoni. (I made half with pepperoni and the other half cheese…just like when I order a pizza.) Smile

Moisten the edges of the wrapper with water and press together tightly. This will seal the pockets together.

Place folded pockets onto baking sheet and spray tops with cooking spray. Cook for about 15 minutes or until crispy and golden brown. Enjoy!
