Easy Pumpkin Pie Muffins

Hi readers! I hope you’re having a nice week. As you can tell, I’m on a pumpkin kick. After all, pumpkin is one of my fall favorites. I found this recipe on Pinterest (originally posted from Sweet Verbena), I modified it slightly (only adding 1 ingredient).

Brace yourself, this recipe is ridiculous! It’s the easiest pumpkin muffin recipe ever. Not only are they so easy to make (only 3 ingredients!!!), but they are healthier for you than a traditional pumpkin muffin, so you can enjoy these guilt-free! Not to mention, they are DELICIOUS!

Because this recipe omits oil and eggs, you won’t be consuming extra unwanted calories.

Here are the 3 ingredients you’ll need to make approximately 18 muffins:

  • 1 box of yellow cake mix
  • 2 tbsp. pumpkin pie spice
  • 1 can pumpkin

Using a hand mixer, blend all 3 ingredients together until completely mixed.

Pour batter into muffin liners. Bake at 350 degrees for approximately 18 minutes (or until a toothpick inserted into the center comes out clean).
