Broiled Pineapple Sundaes

I hope you’re enjoying your week! I don’t know about you, but I’m so happy that Memorial Day Weekend is almost here. It makes me feel like summer is right around the corner, which is what inspired today’s recipe. It has been slightly modified from the June issue of Cooking Light.

Here are the ingredients you’ll need for 2 sundaes:


  • 1 1/2 tbsp. splenda brown sugar mix
  • 1 1/2 tbsp. orange juice
  • 1/2 tsp. agave nectar
  • 1/4 tsp. cinnamon
  • 1/4 tsp. ground ginger
  • 1 cup of coarsely chopped fresh pineapple
  • 1 cup vanilla frozen yogurt

Preheat broiler to high. Chop pineapple.


Combine brown sugar, orange juice, agave nectar, cinnamon, & ginger in a medium bowl. Whisk well.


Add pineapple and toss to coat.


Spread pineapple mixture on a jelly roll pan lined with foil.


Broil 5 minutes or until bubbly.


Place 1/2 cup of frozen yogurt into 2 bowls.


Top with pineapple mixture and enjoy!


Nutrition information:  Each serving has 214 calories, 2.6 grams of fat, 41.7 grams of carbohydrates, 1.2 grams of fiber, and 3.5 grams of protein. It is:

  • Low in sodium
  • High in manganese
  • Very high in vitamin C
