Pepperoni-Marinara Chicken

Hello there! How has your week been?  Mine has been a good one. We celebrated my birthday all week and that makes for a good week! Smile

Also, this week, I got a new copy of Cooking Light magazine in the mail and could not wait to see what recipes I could try to tackle.

This recipe honestly ranks in my top 5 favorites! It has been adapted slightly from Cooking Light. I really enjoy eating chicken, but often fall into a rut with my chicken recipes. This recipe is an incredible chicken recipe and one that I won’t mind falling into a rut with!!!  It was so easy to make (perfect for a week night meal) and it was loaded with tons of flavor even though there aren’t many ingredients. This meal even got a rating of “10” from my husband…so you know it must be THAT good!

Here are the ingredients you’ll need for 2 servings:


  • Non-stick cooking spray
  • 1 tbsp. minced garlic
  • 14 slices of pepperoni
  • 1.5 cups of marinara sauce
  • 1/2 tbsp. oregano
  • 1/4 cup of fresh basil
  • 1 tbsp. olive oil
  • 6 oz. chicken breast
  • pepper to taste
  • 1/2 cup of part-skim mozzarella

Preheat broiler. Chop pepperoni.


Heat a skillet over medium heat. Coat with cooking spray. Place garlic and pepperoni into skillet. Cook for about 2 minutes or until slightly browned. (Be careful not to let the garlic get overcooked as this will cause the garlic to taste bitter.)


Pour marinara into skillet and add oregano. Bring to a boil, stirring frequently.


Remove skillet from heat and stir in basil.


In another skillet, heat olive oil. Place chicken into skillet and sprinkle with pepper.  Cook chicken on each side for about 4 minutes or until chicken is completely cooked. (If you have a food thermometer, make sure it reaches 170 degrees).


Place cooked chicken breasts into a broiler-safe dish.


Pour sauce over chicken. Top sauce with mozzarella.


Place dish in broiler until cheese is melted and bubbly.


Serve with a vegetable and enjoy!
