Hey there! I hope you’re all having a great week! I don’t know about you, but I cannot believe that Christmas is this week. With all of the hustle and bustle and last minute holiday preparations, I know how challenging it is to come up with quick (and healthy) dinner ideas. Well, here’s a great one for you!

This recipe literally took me 5 minutes to prep. You just need a few minutes to chop, slice, and can open. Then just let your slow cooker do the rest!  Plus, this recipe yields 6 servings, so you’ll have enough for lunches the next day.

Here are the ingredients you’ll need for 6 (1.5 cup servings):

  • 1lb. chicken breast
  • 1 large onion
  • 1 large green pepper
  • 16 oz. red kidney beans
  • 16 oz. white kidney beans
  • 8 oz. tomato sauce
  • 16 oz. diced tomatoes
  • 2 cups of frozen white corn
  • 3/4 packet of taco seasoning

Rinse and drain beans. Chop chicken into about 1 inch chunks. (Not pictured since I don’t like to photograph raw meat)  Smile

Chop onion & pepper.

Place all remaining ingredients into the slow cooker. Let the slow cooker do the work, so that you can get your holiday stuff done!

Cook until chicken temperature reaches 180 degrees. (I put mine into the slower cooker in the morning and cooked it for about 4 hours, but you could definitely cook for less time).

Top with 1/4 cup of cheddar cheese and/or sour cream. Enjoy!
