Hey there! I am finally back! I had major computer issues and have been unable to post. To make a long story short, my old computer died. Then, I bought a MacBook Pro and ended up not liking it for blogging (I did love the computer though). I sent the computer back and ordered my new laptop. It took a long time to get here because it shipped from Shanghai China! Now, I have this new wonderful computer and I’m back up and running!

I have been busy cooking, baking, exercising, trying to keep my students calm since they are so excited for Christmas, and just getting ready for the holidays. Are you getting ready for the holidays? I cannot believe Christmas is next week!

Okay, so I came across a recipe called “No Bake Cake Batter Truffles” from Chef in Training . The first time I make this recipe, I followed it to a “t”. Then, I wanted to make it over Operation Nutrition style. You see, they are so delicious and so addictive that I wanted to be able to enjoy them without the guilt of the extra calories. I must say that they taste exactly the same, but now they only have 107 calories!!!

If you are looking to make a treat for the holidays, I highly recommend these. I took these to work and they were gone almost as quickly as I put them out.

Here are the ingredients you’ll need to make 36 Cake Batter Bites:


  • 1/2 cup softened butter
  • 10 packets of Splenda
  • 1 tsp. vanilla
  • 1 cup of yellow cake mix (I used the Holiday Funfetti mix)
  • 1 1/2 cups of flour
  • about 4 tbsp. skim milk
  • Pinch of sea salt
  • Sprinkles for decorating
  • about 10-12 oz. chocolate for the coating (I used these Candy Melts from JoAnn’s):


First, using a hand mixer, blend the butter and Splenda together. Once blended together, add vanilla.


Add cake mix, flour, and salt.


Add skim milk. It will appear crumbly. You can also add any sprinkles (I added the Funfetti). To make sure that you have the right texture, you’ll want to pinch some of the dough together. If there is enough moisture, it will stick together. If it does not stick together, just add a little more milk.


Roll into 36 balls. Melt chocolate.


Dip the bites into the melted chocolate and cover with sprinkles or any other festive decorations you’d like.
