Zucchini Muffins

One of My Favorites

I hope you are having a nice weekend and (staying cool). It was well over 100 degrees yesterday. Today, it’s not far behind that.

I have always loved zucchini bread and muffins. I wanted to come up with a healthier version of this delicious treat. This took some researching, but this recipe is delicious!

Here are the ingredients you’ll need for approximately 18 muffins:


  • 2 egg whites
  • 1 whole egg
  • 2 2/3 cups of agave nectar
  • 1 cup of unsweetened applesauce
  • 1 tsp. vanilla
  • 2 cups of grated zucchini (about the size of 1 medium or 2 small zucchinis)
  • 2 cups of spelt flour
  • 1 tsp. cinnamon
  • 1 tsp. pumpkin pie spice
  • 1 tsp. baking soda
  • ¼ tsp. baking power
  • 1 tsp. salt
  • 2 oz. dark chocolate (optional)

Preheat the oven to 325 degrees. Line a muffin pan with foil muffin liners. (These are excellent and they do not stick!) Peel and grate the zucchini.


Using an electric mixer beat the 2 egg whites and 1 full egg together until frothy.


Slowly pour agave nectar into the egg mixture. Stir in the apple sauce, vanilla, and zucchini. Using a spoon, stir together.


In a separate bowl, combine the flour, cinnamon, pumpkin pie spice, baking soda, baking powder, and salt.


Add the dry ingredients into the wet mixture. Stir together until thoroughly blended together. If you’re going to add the dark chocolate to these, break the chocolate pieces into small chunks. Add to the batter.


Pour into muffin tins and bake for approximately 20-30 minutes. They are finished when you insert a toothpick into the center and it comes out clean.




Nutrition information: Each muffin only has 129 calories. By using agave nectar instead of regular sugar, it helps prevent elevation of blood sugar levels. It also helps you consume fewer calories. You can find agave nectar in the baking aisle of most stores. I found mine at Trader Joe’s Smile

These muffins are also high in dietary fiber, manganese, selenium, and low in saturated fat.
